Decoding Honey Colours and Flavours
Why is Black Forest honey so dark? What gives Florall Fusion its bright colour? We break down the differences in floral nectars.

Line up the five Regal Nectar jars and you will see everything from bright amber to almost black. The colour of honey is a fingerprint of the flowers the bees visited — and it tells you a lot about the taste.
Why honey colours differ
Honey's colour comes mainly from the minerals, pollen and plant compounds carried in the nectar. Generally, lighter honeys are milder and more floral, while darker honeys are stronger, maltier and richer in minerals.
Our five varieties at a glance
- Florall Fusion Coorg Honey — bright and multi-floral, with a vibrant, complex sweetness.
- Western Ghats Honey — deep amber with rich, earthy notes from the forests of Coorg.
- Wild Forest Honey — robust and herbal, harvested sustainably from the deep wild.
- Black Forest Honey — intensely dark, bold and less sweet, with a strong aroma.
- Wild Fuel Honey — full-bodied honey made for active lifestyles.
Does colour change over time?
Yes — raw honey can darken slightly with age and may crystallise, turning paler and creamier. Both are natural and perfectly safe. Warm the jar gently in water to return it to liquid.
Finding your favourite
Start light if you love delicate flavours for tea and desserts, or go dark for drizzling over cheese, roasting and savouring by the spoonful. Better still — try them side by side.
