Honey does far more than sweeten. Its floral, earthy and caramel notes can lift everyday dishes. Here are five simple recipes we keep coming back to.

1. Morning honey-lemon tea

Steep a slice of ginger and a few mint leaves in hot water for five minutes. Let it cool slightly, then stir in the juice of half a lemon and one teaspoon of Florall Fusion Coorg Honey.

2. Honey-glazed salmon

Whisk 2 tbsp Western Ghats Honey, 1 tbsp soy sauce, a crushed garlic clove and a squeeze of lime. Brush over salmon fillets and roast at 200°C for 12–14 minutes, basting once.

3. Honey yoghurt parfait

Layer thick curd or Greek yoghurt with seasonal fruit and toasted nuts, then finish with a generous drizzle of honey. Breakfast in two minutes.

4. Honey-lime salad dressing

Shake together 3 tbsp olive oil, 1 tbsp lime juice, 1 tsp mustard and 1 tsp honey with salt and pepper. Perfect over greens, sprouts or grilled vegetables.

5. Black Forest honey roasted vegetables

Toss carrots, sweet potato and beetroot with oil, salt and chilli flakes and roast until tender. Drizzle with Black Forest Honey in the last five minutes for a glossy, bittersweet glaze.

Tip: add honey towards the end of cooking to keep more of its aroma.
